MBCC Centerplate executive chef Ismael Lasalle’s Pork Crown Roast
November 22, 2019 – Centerplate at the Miami Beach Convention Center (MBCC) elevates traditional food and beverage service under the exacting direction of Executive Chef Ismael Lasalle.
This season, Lasalle shares his Pork Crown Roast recipe perfect for the holidays!
Ingredients:
7-8 lbs pork crown
Espresso Rub
1 cup espresso grounds
3 tbsp. garlic
3 tbsp. onion powder
1 tbsp. paprika
1 tbsp. cumin
1 cup sugar
2 tsp black pepper
3/4 tsp cayenne pepper
1/2 cup kosher salt
1 tbsp. chili powder
1. Mix espresso grounds, garlic, onion powder, paprika, cumin, sugar, black pepper, cayenne pepper, kosher salt and chili powder in a medium mixing bowl for the rub.
2. Rub espresso mixture over pork crown.
3. Roast pork crown at 325 degrees for 1 hour and 30 minutes or internal temperature reaches 155 degrees
